
Grease Trap Cleaning
All commercial kitchens and food businesses have to have a grease trap. New Jersey regulations are enforced by the Passaic Valley Sewer Commission, health departments and public water & sewer departments.
Most business owners think if they don’t have a deep fryer, or even if they don’t cook food then they don’t need a grease trap. Well, this is a misunderstanding of what a grease trap does. ALL food establishments must have a grease trap. The purpose of a grease trap is to capture the small food scraps & particles that are washed off into kitchen sinks and from the commercial dishwashers. This food & fat waste goes down the drain with the water into the grease trap. Then, once inside the trap, the interior baffles separate the food waste from the water allowing the water to flow out of the trap and continue into the public sewer without causing any issues in the public sewer. The food & fat waste remain inside the trap and form a sludge/solid-like material that must be cleaned out on a monthly basis.
IPC provides a full-service cleaning for grease traps:
- Removing all grease buildup from the trap
- Scraping the grease from the interior of the trap and removing and cleaning the grease baffles
- We run a cable auger 6’ into the inlet and outlet drain lines of the trap to ensure there is no buildup or blockages
- We run hot water for 10 minutes to ensure proper flow through the trap
- Lastly, we add a live enzyme bacteria to help reduce grease levels and we add a pleasant scented deodorizer.
An IPC monthly service log is signed for health & public sewer inspectors to see.
